Hacienda Tres Rios Chefs Table by Kirsten Alana

The Chef’s Table at Hacienda Tres Rios

We walked out of of our air conditioned room into the steamy heat of a Mexican night. Torch smoke swirled in the air, room lights sent glittering shards into the darkness and the musical quality of the three rivers meandering through palm trees was a soundtrack on our walk to the resort kitchen. Arriving at the main dining room, we were ushered through tables of guests enjoying the buffet past swinging metal doors to a table for two set within sight of all the action. The staff smiled in welcome and our stomachs grumbled, after an entire day soaking up sun and tequilaritos we were ready for a feast! A feast is what awaited us – in seven courses we were taken to Italy and back all from the heart of the Hacienda Tres Rios kitchen. All, by Head Chef Oscar.

Since our trip coincided with my birthday, the seventh course was a special cake prepared with my favorite … raspberries! It was heavenly and as I love dessert – probably my favorite course. Chef Oscar’s tres leches cake made me a believer in this milky delight so many rave about. Yet it was the soup which really turned on my foodie senses. Had it not been improper, I would have asked for seconds. I never imagined that humble corn could be elevated to such a culinary heaven!

Enjoy … The Chef’s Table!

First Course – Mozzarella & Parmesan Biscuit with Balsamic Vinaigrette Salad

Second Course – Tuna Tartar with Mango and Cilantro

Third Course – Black Corn and Artichoke Soup with Spicy Chorizo delivered with Flaming Tequila. This was my favorite course. I still crave this all the time.

Fourth Course – Salmon with Coconut Couscous and Curry Lobster

Fifth Course – Spiced Lamb with White Truffle Mashed Potatoes

Sixth Course – Beef Tenderloin with Bacon and Arugula

Seventh Course – Tres Leches Cake with Raspberries

I have been living off of basic food the last two weeks while I’m camping. I’m currently sitting in a McDonald’s for their free wifi. I read this post with food envy 🙂 The soup course *does* look like it would be a winner. I’ll close my eyes and pretend I’m there O:-)
